Description
The La Pavoni Black Cellini Evoluzione is a semi commercial coffee machine with an E61 group head, equipped with a copper and insulated single boiler for energy saving and increased thermal stability. The drip tray and top cup warmer and feet are made of AISI 304 stainless steel, side panels are in black finish steel. Chromed brass group head and 2 portafilters. 3 lever knobs to control hot water, steam and for extracting coffee.
It comes equipped with 3 gauges to check both pump and boiler pressure and a brewing pressure profile control on the group head to control the correct brewing extraction process. It has a full commercial grade rotary pump, motor and pressostat. The single boiler is for making steam and hot water. It operates with a heat exchange system in the boiler to produce the correct temperature for making coffee. There is an additional option to have a water connection to have water directly plumbed in or you can hand fill the water tank.
BREWING PRESSURE PROFILING CONTROL
The additional pressure gauge set on the group, allows you to read the brewing pressure profiling of the espresso. Thanks to this indicator the barista can verify the exact grind, pressing and dose of the coffee in the filter.
If the brewing pressure is lower than the pump calibration (9 bar is the company setting), it means that the grinding is coarse, or the coffee is not pressed correctly, or the dose is not enough.
