Tea comes from the tea plant "Camellia Sinensis" (not to be confused with orange citrus flavour).

The following teas come from the Nilgiri Mountains in the southern highlands of India, found on the southern peninsular. Tea has been cultivated here since the late 1800’s. The elevations exceed 1000 meters. The rainfall and brisk weather conditions are favourable for the growth of high grade tea leaves. Nilgiri means “blue mountains” in the local dialect.

It is said that about 850 years ago the inhabitants of the hills called the region so because of the blue haze of cloud which always covered the hill tops. Others say it was given this name because of a plant that blooms every 12 years and covers the hill tops like a blanket with pretty blue flowers. These teas come from the Korakundah Estate (which produces Organic teas) and Chamraj group of estates where no unnatural chemical pesticides are used.

The method used for processing these teas is the Orthodox Method, which is traditionally used for the higher end premium quality tea market, as opposed to the other method not used with our teas is [CTC] Cut Tear and Curl. This process allows for further fermentation and is mainly used for teas sold on the supermarket shelf.

The black teas are fermented, green teas are unfermented and oolong teas are semi-fermented.

This is the top of the range in loose leaf teas, providing a clean, pure calming taste, with large tea leaves that unfold extra flavour. This tea is grown high in pristine virgin forest surroundings in a chemical pesticide free plantation from the Korakundah Estate in the Nilgiri. Established in 1922, it has an elevation of 7500 feet. The Korakunda Estate is a member of the IFOAM . (International Federation of Organic Agricultural Movement) and has Swiss Certification by the I.M.O. (institute fur Martokologie Institut D’Ecocommerce). This means Korakunda tea is all natural.

ORGANIC ENGLISH BREAKFAST

A combination of 4 different blends of Flowery Orange Pekoe copper tinged leaves from the Thiashola Plantation, (Chemical pesticide free estate) also located in the Nilgiris, South India , subtly blended to create a delicate taste with a fresh tea garden aroma. Best drunk without milk, or with just a hint of lemon or Ginger to add more zest and sugar to taste. It can be mildly cooled with milk as well, if brewed a tad strongly.

MADRAS SPICE CHAI

In India , the word “chai” means tea. Our Spice Chai is from Madras in India . It is an exotic combination of 8 spices and Broken Orange Pekoe tea as the base, with the predominant taste of cardamom, cinnamon and dry ginger. Other spices include aniseed, fennel, white pepper and cloves, with the new addition of rose petals to add to the bouquet of flavour. This is an authentic Chai, imported from the traditional Chai makers in Southern India where the best spices and the Nilgiris teas are grown. The most common way Spice Chai is enjoyed in India is with milk.

This also comes from the Korakundah Estate. Green tea is well known for its antioxidant qualities and health benefits. Green tea is not fermented and dry in its natural state. Also being organic has the added clean taste sensation. A perfect drink after a meal to cleanse the palette or can be enjoyed as a smooth soothing drink. It is recommended for a full intense flavour to steep for 5 minutes. However if you prefer a more subtle taste, brew less and always to your liking.

PURE EARL GREY

This tea consists of Black Tea, Flowery Orange Pekoe (FOP) From the Chamraj Estate. It is delicately flavoured with the highly scented natural oil of the bergamot plant. This plant has slight mint and lemony smell but a perfume that is distinctly it’s own. The Northern American settlers discovered that the bergamot plant was used by the Northern American Oswego Indians for medicinal purposes to relieve symptoms associated with coughs, colds and sore throats. Earl Grey is pleasing to drink and a calming, soothing drink with a slight sweet citrus taste. Earl grey is perfect to drink on its own or with sugar and milk.

BLACK JASMINE TEA FOP

This consists of high grade black tea from the Chamraj Estate. The tea is mixed with jasmine flowers and is scented with the natural oils of the jasmine flower as well. It is truly a sweet sensational experience for those who appreciate fine teas. The exotic sweet taste can be enjoyed brewed to your liking and with or with out sugar or milk.

Brewing Method:

Add 1 to 2 tea spoons of tea per cup or slightly more for extra strength. For best results the water boiled should be just around 75 degrees Celsius, not piping hot. This may burn the leaves and would result in bitterness in the tea and a bad aftertaste.

Tea may be steeped for as long as 5 minutes but if you prefer less strength then brew for less and always to your personal taste or that of the person you are serving. If left too long the tannins are extracted further in the tea and the fermentation process will continue, thus creating a more bitter taste.

Drink the tea as soon as it cools to a hot drinkable temperature that won’t burn the mouth and you’ll find you may even enjoy without sugar and milk in its purest form.
